Mexican soup recipes (Sopas mexicanas)

Mexican soups are sometimes overlooked but they are nonetheless an important part of mexican cuisine. It is true that when we think of mexican food, I grant you that soup isn't the first thing that comes to mind, but there is a wide variety of mexican soups waiting to be tried, and here is a very small sample of their diversity. Mexican soups are often a nice first course to an elaborate mexican meal, but not always; they range from the humble side dish all the way to the hearty soup-as-a-meal bowl. Mexicans love their mexican soups...
