The delicious mexican tortilla soup with Chipotle (Sopa de tortilla)

The tortilla soup is a mexican recipe that is mostly enjoyed as a first course part of a larger meal in Mexico as Mexicans do not usually add chicken or meat to it. This easy recipe shows a recipe closer to the actual mexican version, although I took the liberty to replace the traditional pasilla chilies with chipotles in adobo, because I think they work so well in this soup.

The Tex-Mex version of this soup has more ingredients and can be served as a main course. For now, here is the classic mexican dish:

Recipe for Mexican Tortilla Soup:

Ingredients for 6-8 servings:

* 8 corn tortillas from the day before, they will be less moist and crispier
* 2 red ripe tomatoes
* 2 cloves of garlic
* 1 onion
* 1 sprig epazote
* 8 cups liquid chicken broth (not concentrate, the actual broth)
* 1 cup of grated old cheddar cheese
* 2-3 chipotle peppers, with a little Adobo from the can (optional)
* 2 ripe avocados
* fresh cilantro leaves
* Salt to taste
* the necessary canola oil

Preparation:

Step 1: Cut the tortillas in strips, wrap the tortilla strips in dry towels and allow them to dry; if you are starting with tortillas that are too fresh, you can bake them in the oven on a baking sheet. Once dried, fry them in oil until they brown, remove and drain on paper towels

Step 2: In a food processor grind the tomatoes, onion and garlic. Cook in oil the preparation we just did, add the epazote and season to taste. Lower the heat pour in the broth; add in the sliced chipotle peppers along with about one tablespoon Adobo sauce; mix in a teaspoon salt; check and adjust the seasoning. Bring to a boil, lower the heat and simmer for 30 minutes, uncovered.

Step 3: When its time to serve, cut the avocados in slices and divide the avocado slices among the servings you are about to make. Add the tortilla strips to the soup and lower the heat; saving some tortilla strips to garnish each bowl. Pour the soup into each individual bowls (that already have avocado slices in them), sprinkle with the extra tortilla strips then sprinkle grated cheese and cilantro as garnish on top....
