Recipe for lime soup (Sopa de lima)

Here is a recipe for a soup that belongs to the classics of authentic mexican cuisine. Also not a very complicated recipe, this soup has a rich taste from which the taste of the chicken  is combined with the lime and tomatoes to create their own special aroma...




Mexican recipe for the lime soup:

Ingredients for 4-6 servings:

* 1 lb. of chicken breast
* 1 clove of garlic
* A pinch of dry oregano
* A bunch of fresh coriander
* Salt to taste
* 1 white onion
* 1 large red pepper
* 2 ripe tomatoes
* Oil, as needed or to taste
* 6 limes
* 2 tablespoons of dry chicken consommé
* 4 tortillas cut in small strips and fried


Preparation:

Make the chicken broth by cooking the chicken breasts, the garlic, the oregano, the chopped coriander and the salt in 8-9 cups of water. Bring the soup to a boil then reduce the heat and cover. While the soup is boiling, put the tomatoes in the boiling water and let them boil for about 30 seconds; so you can peel them easily after; reserve the tomatoes. Allow the broth and the chicken to simmer to cook the chicken for about 25 minutes. When the chicken breasts are cooked pull them out of the water, discard any skin or bones and chop them to small strips; reserve the chicken.

Peel the tomatoes and the onion. Chop the onions, the red pepper and the tomatoes; cook all these ingredients in oil until they are done. Add the juice from 4 limes to the chicken broth, season with the chicken consommé powder, boil for 10 minutes.

In each individual bowl, put some chicken, put some tortilla strips, pour the soup over then decorate each bowl of soup with a thin slice of lime floating on top.
