Mexican recipes for salads and dishes with vegetables

Mexican cuisine is full of vegetables and vegetarian recipes, this is an undeniable fact. We can see this more and more for two distinct reasons: first, as mexican cuisine evolves with worldwide and western trends, a more conscientious approach towards nutritional values to help with health issues is forcing high-end new mexican cuisine towards healthier dishes. Secondly, "mexican" traditions have already taught us the greatness of many of the vegetables we cherish now, however Mexico uses many more vegetables since time immemorial that are just begging to be discovered in your plate... We will attempt in this section to discover those unique and traditional mexican vegetable recipes...

Please keep in mind we are not attempting here to create a true vegetarian food section here as some traditional recipes might include some ingredients (e.g. Chicken broth, eggs, dairy products, dried shrimp, etc...) that aren't accepted in a strict vegetarian diet although you can always substitute these ingredients with something that will follow any specific guidelines.
