Avocado, Mango, arugula and Shrimp Salad
(Ensalada de Mango, Arugula, Camaron y Aguacate)

A simple and refreshing mexican salad recipe, with nothing but fresh ingredients from Mexico, featuring avocado and mango combined in a delicious way, served with shrimp, all mixed as a salad with tasty aragula leaves.







Mexican Salad Recipe:

Ingredients:

* 1/2 lb. large fresh shrimp, peeled and vein removed
* 1 lemon
* 2 ripe avocados
* 1 ripe Mango, diced
* 1/2 cup olive oil
* 2 tablespoons lemon juice
* 2 cups romaine lettuce, arugula
* 1 bunch cilantro, washed
* 1/2 cup red onion, chopped finely

Procedure:

1) Take the lemon and slice it in half. With a sharp knife cut thin slices.

2) Cut avocados in halves, remove the pits and discard the shell. Cut into small cubes and sprinkle some lemon juice over the avocado to prevent it from browning too quickly because of oxidation.

3) In a small bowl mix the vinaigrette: olive oil, lemon juice, salt and pepper to taste and beat until smooth.

4) Make shrimp on a pan over medium heat, frying them for 1 minute on each side or until pink.

5) In a large bowl toss well the arugula leaves with the vinaigrette.

Arrange the salad on individual plates and put over them the mango strips, avocado cubes and shrimp; top with the cilantro leaves on top and sprinkle some of the remaining vinaigrette over.
