The recipe for Veracruz-style duck

The authentic cuisine from Veracruz is well known for its seafood recipes and is appreciated by all Mexicans; as much as its special touch in its meat dishes. This special mexican recipe to prepare duck is from Veracruz; it uses white wine to give it a special touch. In culinary arts, white wine is used to accentuate the taste of certain meats or poultry. This tradition really started in the nineteenth century when the French began experimenting with combinations of different wines with food to balance flavors, which helped give french gastonomy its solid reputation...




Recipe for the Veracruz Duck:



Ingredients for 4 guests:

* 1 Big Duck,
* 6 very thick slices of ham, Diced
* 3 cups Chicken Broth
* 2 onions
* 5 slices bacon, diced
* 5 Lemons
* 1/2 cup white wine
* 1 sprig fresh parsley, chopped
* 1/2 lb. of butter
* Salt and pepper to taste

Preparation:

1) Prepare the duck, and once it is ready cut it in 4 pieces; place in a deep pot. Rub with lemon juice and then, fry the duck pieces in butter.

2) Carefully wash and drain the cilantro then chop it very finely; chop the onions. Add the onion to the pan where you first started to fry the duck and also fry the bacon and ham bits with the onions. Mix the ingredients so they all cook evenly. When the onion starts to caramelize, pour the chicken broth in and season with salt and pepper to taste.

3) Keep the heat setting at medium-low and simmer, until the duck is completely cooked. When the duck is cooked pour the white wine over, letting it boil for 5 minutes or so.

4) Pull away from the burner and check the seasoning, then serve in a deep dish with a good ladle the juices from the pot. Decorate the dish with chopped parsley and serve while its hot.
