Mexican tacos de longaniza recipe (longaniza sausage tacos)

The longaniza is a type of sausage made from pork and spices, resembling the chorizo but spicier and with a deeper taste. Although the longaniza is presumed to be from Spain, it is enjoyed worldwide now. There are various recipes to make longaniza sausages as they unfortunately don't have an official worldwide standard recipe, but the way the longanizas are made in Mexico is pretty much standardized. Naturally, a mexican cook somewhere decided to try the longaniza in some Tacos, and the resulting Taco is a taco with its own taste and personality. If by chance you find these sausages at a grocery store near you, and preferably the mexican variety, you have to try this taco!




Recipe for longaniza tacos

Ingredients:

* 30 corn tortillas
* 2 lb. of longaniza sausage
* 1 cup oil
* 1 Onion
* 4 fresh cilantro branches
* Salt and pepper to taste
* 3 chiles jalapeño

Preparation:

1) Wash the chiles and clean the fresh cilantro, chop these ingredients finely and onion in small slices.

2) Fry the onions in a skillet in oil. Make sure the oil is hot enough and cook the onions until they caramelize.

3) Cut the longaniza into pieces and fry in the oil with the onions until slightly browned, then add the jalapeño chiles and cilantro.

4) Add the ingredients gradually and then let it rest. Meanwhile, heat the tortillas and then fill them with the longaniza sausage preparation.

Enjoy your longaniza sausage tacos with some lime and hot sauce...
