The recipe for Stuffed Jalapeño Peppers (Jalapeños Rellenos)

The stuffed and fried jalapeño pepper appetizers are always a hit in any gathering; this recipe is more of a tex-mex recipe than authentically mexican but fried and stuffed peppers (rellenos) is certainly not unheard of in mexican cuisine...

Recipe for jalapeno peppers stuffed with cream cheese and bacon:

Ingredients for 6 guests as appetizer:

* 24 jalapeno peppers
* 8 oz. cream cheese container
* 1/2 lb. grated cheddar cheese
* 8 slices cooked bacon, sliced to very fine strips
* 1/4 cup flour
* 2 eggs, beaten
* breadcrumbs, amount as needed
* 2 cups canola oil
* salt

Preparation:

1) Make a lenghtwise cut on the top part of each jalapeno chile, then carefully remove each jalapeno's seeds and veins. In a bowl mix the cheeses with the bacon and sprinkle a bit of salt; stuff the chiles with this bacon and cheese mixture.

2) Align two plates and one bowl: first one plate with the flour, then pour the eggs in the bowl followed by the breadcrumbs in the last plate.

3) One by one, roll the chiles in flour first, then dip them in the beaten eggs and then roll them in the breadcrumbs, making sure the peppers are covered by them. Put them in a bowl and put it to the refrigerator for 15 minutes.

4) Pour the oil in a deep skillet; heat up the oil and when the oil is hot fry the chiles two by two for about 3 minutes or until they become golden brown. As always, be careful when frying food in oil... Put them on paper towels to drain the excess fat, then serve.

Serve your stuffed jalapeño peppers with some red salsa... you're in for a treat!
