Shrimp in Escabeche Tostadas (Tostadas de camarón en escabeche)

Sometimes, mexican dishes do not necessarily have to be complicated or difficult to make, and you can still get that special mexican signature taste with very little effort; these easy recipes are much appreciated in the hot summer months when we crave for simple, light and refreshing meals. That's precisely at times like this that easy recipes for tostadas come into play, such as this one...




Recipe for shrimp in escabeche tostadas

Ingredients (4 people):

* 8 medium sized tortillas
* Oil for frying
* 1 cup refried beans
* 2-3 ripe avocadoes
* fresh cilantro, finely chopped
* 1 romaine lettuce head, well washed and thinly sliced.

For the "escabeche" shrimp:

* 1/2 cup olive oil
* 1 large onion finely chopped
* 1 tablespoon dried oregano
* 1/4 cup apple cider vinegar
* 1 lb. of medium sized shrimp, peeled and washed well
* Salt and pepper to taste
* Chile de arbol salsa

Preparation:

1) First, we prepare the Marinated shrimp (Escabeche de camarón): heat up the oil, add the onion and cook until translucent, add the oregano and the shrimp and sauté for two minutes, add the vinegar, salt and pepper to taste and cook another two minutes; our shrimp escabeche is ready, pull away from the heat and let the shrimp cool down to room temperature.

2) Fry the tortillas in hot oil until they tan and become crispy, take them out of the oil and place them on absorbent paper to drain excess fat. Spread some refried beans over, cover with lettuce and put the shrimp escabeche over the lettuce; place a few slices of avocado over all this.

3) Serving your tostadas with escabeche de camarón:

To avoid that the tostadas become soggy, serve them immediately nicely arranged on a colorful plate accompanied by a chile salsa like the one found on our red salsa recipe.
