Shrimp with squid Tostadas

A nice and fresh tostada recipe with seafood; a nice mexican appetizer to begin an elaborate meal; or even a quick light meal around the pool. Very easy to make, tostadas can be customized in many different ways, and with seafood you can create some truly spectacular tostadas.




Tostadas made with shrimp and squid

Ingredients for 5-6 guests:

* 10 tostadas (or make your own from corn tortillas)
* 2 ripe avocados
* 1 lettuce
* 1 onion, cut in quarters
* 1 lb. cooked and peeled shrimp
* 1 and 1/2 lb. whole baby squids, cleaned, with tentacles
* juice from 1 orange
* juice of 1 lime
* 2 serrano chilies
* 1  bunch fresh cilantro
* 4 bay leaves and dried hoja santa leaves
* salt

Preparation:

1. Cut the squid bodies into rings. Make them cook in a large saucepan of boiling water. Add the onion, bayleaves and hoja santa to the water. Boil during 5 minutes. Drain and run under cold water to cool them down.

2. In a large bowl, gather the squid, shrimp, orange juice and lemon. Season with salt. Add the peppers, very finely sliced into thin strips, and the chopped fresh coriander.

3. Allow to rest in refrigerator for 30 minutes; this dish is meant to be at room temperature... Meanwhile, shred the lettuce into thin strips. In a dish, mash the avocadoes with a little salt with the back of a fork. On each tostada, spread a little mashed avocado, a few slices of lettuce, the salad and top with the seafood preparation.

That's it... your tostadas with shrimp and squid are ready to eat...
