Tostadas with Chicken and Mole Verde

The Mole Verde is said to have been created the state of Oaxaca "the land of the seven moles" and enjoyed throughout the state. It is served often with pork, it can also be prepared with beef or chicken. A different way to enjoy mole verde is on tostadas, and here is now one way mexicans really enjoy. If you want your chicken tostada with Mole Verde to have a real homemade taste, it is easy to make your own tostadas: for this all you need is tortillas and vegetable oil; fry them in hot oil long enough so that they become crisp and then drain the excess fat. Let them cool and then cover with the mole.

Recipe for the Tostadas with Mole Verde and chicken

Ingredients for 6 guests:

* 3 Chicken Breasts
* 1 clove of garlic, minced
* 1/2 yellow onion, to cook with the chicken
* 1/2 spanish white onion, which you will use raw, on the tostadas
* 1 (8 oz) Green Mole Paste container
* Three cups liquid Chicken Broth
* 1 pack Tostadas
* Salt to taste
* Vegetable Oil
* Crema or Sour Cream, to taste
* Queso Añejo (Añejo can be substituted with grated Parmesan)
* 1 avocado
* 1 red tomato


1) In a skillet filled with enough water to barely cover them, cook the chicken breasts without the skin with a few pieces of onion and minced garlic. At the first sign of boiling add salt to taste.

2) Once cooked, let them cool down, then shred the breasts finely. Reserve separately.

3) In a saucepan pour two tablespoons oil and then the mole paste, then dissolve it in the chicken stock, adding it gradually while stirring constantly.

4) Stir constantly until the green mole is thick and smooth and simmer over low heat. Add the shredded chicken breasts and mix with the mole.

5) Pour this chicken and mole preparation while warm on the tostadas, add spanish white onion slices on top, place some slices of avocado over then sprinkle the grated cheese over it all.

6) Lastly, add sour cream (or mexican crema) to taste, and tomato slices for garnish and... enjoy your tostadas with chicken and green mole!
