Mexican Chicken Wings recipe (Alitas enchiladas)

Chicken wings are almost always a hit, just put them at them center of a table surrounded by hungry guests and watch them disappear! Now for a Mexican food lover, some extra condiments have to be present to make them worthy of being called authentic Mexican-style! Here is an easy to do recipe for slightly hot, green salsa mexican chicken wings...

Mexican recipe for Chicken Wings

Ingredients for 4-5 spicy chicken wings lovers:

• 20 chicken wings or drums
• 6 poblano chillies (can be substituted for others if unavailable)
• 2 green tomatoes (tomates verdes) if you can find them...
• one onion
• Enough white flour to coat the wings.
• 5 tablespoons vinegar
• Bunch of fresh cilantro
• 1 teaspoon cumin
• 1 teaspoon salt
• 1 teaspoon black pepper

Preparation:

1) Disjoint the wings; separate the first two meaty parts and discard the tip of each wing, so we get two pieces per wing. Roll the wings in flour so they get completely coated with flour. Reserve the chicken pieces for later.

2) Cut the chillies in two and remove their veins and seeds; put the poblano chilies in boiling water for 10 minutes. Reserve 1/4 cup of that water used to boil the chillies.  Put all the ingredients, with the 1/4 cup water, except for the chicken in a blender or food processor and liquefy to turn it into a salsa.

3) Put the chicken parts in a large bowl. Pour the green chillies mixture over the chicken parts, mix and marinate everything for 8 hours or more.

4) Preheat the oven to 400 ˚F. Arrange all the chicken pieces in a pan lined with aluminum foil. Put all the green sauce making sure all wings are covered.

5) Put the pan in the oven and cook for 45 minutes. Finish roasting them with the broil setting in the oven while keeping a watchful eye on them so that they dont burn; broil until the chicken looks crispy golden brown. You might have to do this step in 2 batches.

Serve your chicken wings while warm...
