Chipotle Honey Mexican Chicken Wings

This is more of a Tex-Mex recipe, for messy, sticky but oh so delicious Chipotle-honey chicken wings! I have tried this recipe and it was a big success. This recipe with chipotle in adobo will give you somewhat hot chicken wings; you can of course adjust the hotness of your wings with the amount of chipotle adobo used...

Chipotle Honey Chicken Wings recipe

Ingredients for 4 guests:

1 cup honey
1 small can chipotle chiles in adobo, blended
1 tbsp Dijon mustard
3 guajillo chilies
1/2 onion coarsely cut into quarters
sea or kosher salt and freshly ground black pepper
5 tbsp olive oil
1 bunch fresh cilantro, finely chopped
3 tsp ground cumin
2 tsp paprika
3 lbs. chicken wings
3 tsp. toasted sesame seeds
3 finely sliced onions

Preparation:

1. Preheat the oven to 300 °F. Using a blender or food processor blend the chipotle chilies in adobo; pour in a bowl and reserve.

2. Let's make the chile rub sauce first... In a skillet, heat up one cup water with the chiles, 1 teaspoon salt, 2 tablespoons of the oil, 1 teaspoon cumin and all the paprika and the half onion. Cook at medium-high heat, boiling until the onions are cooked and the chilies soft, then blend everything using your blender or food processor.

3. Prepare the chicken wings by cleaning them, cutting them like this: throwing out each of the end tips then cutting them again in two along the joints. In a bowl, mix the wings with the rub we did in the previous step so they are well coated. Arrange the wings on a baking sheet lined with a sheet of aluminum foil, and cover them with another aluminum foil sheet. Bake in the oven until the wings are cooked, or about 45 minutes at 300 °F. When the wings are cooked, take out the top aluminum sheet and broil for a few minutes until the chicken wings become a bit crispier, but careful not to burn them.

4. While the mexican chicken wings are cooking now let's turn to the chipotle glaze sauce... In a bowl, mix together the honey, the blended chipotles in adobo, 1 tablespoon of the Dijon mustard, 1 teaspoon salt, and 2 tablespoons of the oil in a bowl; this will be the sticky honey glaze.

5. Put the cooked chicken wings in a large bowl, add the chipotle glaze, the chopped cilantro and the toasted sesame seeds; toss until the wings are well coated with everything.

Serve to your guests while they are warm!
