Recipe for chipotle shrimp with avocados

Take advantage of the delicacies offered by the sea, here prepared the mexican way! This dish is easy to prepare, although it is slightly spicy (I personally think a bit of hotness enhances the taste of seafood); the delicious shrimp gets prepared with spicy chipotles, sauteed with onions and parsley, this mexican recipe will make the spicy seafood lover very happy!




Recipe for shrimp with chipotle and avocados:



Ingredients:

1 lb. large shrimp, thawed, deveined and shells completely removed
3/4 cup butter
1/3 finely chopped onion
1 small can of chipotle chiles in adobo
1 cup cream
2 avocados
1/3 cup vinegar
1 bunch parsley
salt and pepper to taste


Making this mexican seafood recipe:

1. In a saucepan over low heat melt half the butter, brown the onion bits in, mix in all the chipotle and all the cream; bring to heat.

2. In another pan melt the remaining half of butter, add the shrimp, season, and cook for 2 minutes or so.  After the 2 minutes add the mixture we did in step 1.

3. Cut the avocados and dip them in the vinegar with salt and pepper, this will slow down the oxidation process and make your avocado pieces more appealing.

4. Serve two large avocado pieces on each plate and some hot shrimp we just did, then you can garnish each plate with some chopped parsley.
