The chipotle pork (cerdo al chipotle)

A pork fillet is an ideal, convenient and delicious meal for two: easy, rapid and simple. It remains delightful as we present it here, with some asparagus to the broiler and entire sweetcorns, but also you can adapt this recipe into many things, such as a fajita, combining it with your favorite combination of peppers, onions, sour cream and grated cheese. As presented here this mexican recipe is a little too hot for younger children; and it took me a while to get used to the heat, but it tastes great!

The most important ingredients in this mexican recipe. This can of
chipotle in adobo would have been enough for 2-3 pork fillets


Ingredients:

1 Can of chilis chipotles in adobo, you will also use all the adobo sauce
2 garlic cloves, minced
1/2 cup orange juice
3 tablespoons lemon juice
1 tablespoon balsamic vinegar
1 teaspoon dry Oregano
1 tablespoon Cumin powder
1 teaspoon salt
1/2 teaspoon freshly ground black Pepper
1 lb. pork Fillets (please see the "more advice" below)

Instructions:

1. Mix the chipotle and the sauce, the minced garlic, the orange juice, the lemon juice, the vinegar, the oregano, the cumin, salt and pepper in a blender or a small food processor; liquefy or process until the chipotle is chopped and the mixture well blended; this will be the marinade for your meat.  Pour the sauce in a pan (or any closeable container) lay the pork fillets in, roll them in the marinade to make sure they are well coated; close the pan with plastic wrap or close the countainer with its proper lid.  Marinate the pork in the refrigerator for at least two hours up to a maximum of 8 hours.

2. Pre-heat your oven to 325°F. Put your fillets with the marinade in an oven-going pan.  Place them at the center of the oven.  Make sure you turn them at least once while they cook.
Cooking time should last around 20 minutes per side for a grand total of 40 minutes, depending on size of the fillets; or better, if using an inserted thermometer, until the temperature in the center of the meat reads 145 °F.  Once ready, bring to a slicing board and slice the pork fillets across, in rounds.

Serve with some mexican-style beans, some chipotle chilies on the side and some rice...

More advice: A pork fillet typically weighs about 1 pound and is enough for 4 medium-sized portions. The whole pound and more pork if you desire can marinate in the same quantity of marinade that you made here.

About the ingredients: The chilis chipotles in adobo are chilis jalapeños smoked and canned in a rather hot sauce. Find them in the mexican food section in big supermarkets, or else at latin markets.
