Mexican Chicken Sopes





Mexican Recipe for Chicken Sopes

Ingredients:

* 2 lb. corn masa (Nixtamal)
* 1/4 cup melted Butter or vegetable oil
* 1 lb. of Pinto Beans
* 2 onions
* 2 cloves garlic
* 1/2 Romaine Lettuce Head
* Cream Cheese or White
* 1/4 cup Cream
* 1 chicken breast or 2 boneless thighs
* Salt and Pepper to Taste

Preparation:

1) Cook the chicken breast without the skin with 1/2 of one onion, a clove of garlic and salt to taste. Drain the broth and shred the chicken very finely. Set aside.

2) Cook the beans in a pressure cooker with garlic and onion. Drain and blend with a blender, then season with a little oil and salt.

3) Add water gradually to the corn masa until it becomes a dough and you can easily pick it up in your hands. Add salt and pepper to taste while kneading the dough.

4) Take a chunk of dough on your hand and shape it like a ball, flatten it gradually, rather thick and shaped like a small flat circle.

5) Using a Comal or a skillet with a little oil or butter, cook the tortillas one side while while keeping them not 100% cooked. Carefully while still hot pinch the side towards the cooked side, shaping it like a low-walled bowl, Let the part of the center is a hole to the other ingredients. Fill the inside of the bown before frying again with a layer of beans.then cook the other, uncooked side.

6) Over the beans add the shredded chicken. Serve your chicken sopes while warm and sprinkle them with crmbled cheese, sour cream and finely chopped and cleaned lettuce.
