Mexican Recipe for Chicken Flautas (Flautas de pollo)

This mexican recipe uses flour tortillas, so we will consider these as flautas. Recipe for Chicken Flautas

Ingredients for 4 guests:

- 2 boneless chicken breasts or thighs
- 1 white onion, cut in quarters
- 2 bay leaves
- 1/2 lb. cream cheese
- Salt and pepper
- 16 Flour tortillas
- Canola Oil for frying

Preparation:

1) Place in a pot with water the chicken, onion and bay leaves. Bring to a boil over high heat setting and once it starts to boil reduce the heat and cook for 20 minutes. Once cooked, take out what is left of the onion and chop it down to small bits; discard the bay leaves, remove chicken and allow it to cool down slightly. Shred the chicken to tiny bits with a knife and a fork, and try not to leave any larger chunk. In a bowl mix the shredded chicken and the onion bits with the cream cheese and season to your taste with salt and pepper.

2) Just heat up the flour tortillas on both sides in a pan with no oil at this point, just to make them more pliable; like 10 seconds per side when the pan is hot. Fill in the preparation of chicken and cheese and wrap tightly. Use two toothpicks to make sure the flauta won't open while being fried. Now pour about half an inch of oil in the pan, bring the oil to heat and fry the flautas in batches in the hot oil until both sides are browned.

3) Serve as an appetizer, or as a main meal with refried beans and mexican rice...
