Cheese salsa recipe (Salsa con Queso)

The Cheese salsa for Nachos, better known as ¨Salsa con Queso¨ is an appetizer salsa served mostly in Tex-Mex restaurants; a classic to serve when watching a sports event with friends. It is well known in the cuisine of the south-west of the United States, in Mexico you will only see this salsa in the northern states and at touristic resorts. Although it is sometimes perceived as a mexican recipe, in fact this snack is a creation from southern United States; it can be served with nachos, fried tortillas or totopos. The totopos, if they are the original ones from Mexico, should not be confused with the tortilla chips or Nachos, which are only a commercial version of the real totopos.



Recipe for cheese salsa:

Salsa con Queso with nachos
Ingredients:

- 1 lb. orange cheddar cheese
- 1 cup evaporated milk
- 2 tablespoons mustard
- 1 tablespoon butter
- salt, parsley.
- tabasco or any hot pepper sauce
- 1 teaspoon paprika
- 1/2 can marinated sliced jalapeño peppers (optional)

Preparation:

1. Depending on the type of cheese chosen this recipe can be done in many different ways; the idea is to have your cheese in the smallest possible chunks. Best way here is to grate the cheese.

2. Mix all the ingredients above in a pot, over low heat setting cook it, and stir occasionally, until the cheese is completely melted and has become a sauce. It is important to stir from time to time to prevent the cheese from burning and sticking. At this time pour in some hot pepper sauce up to your desired level of spiciness.

3. When the cheese is completely melted, pull away from the burner and pour in a stylish bowl and arrange everything on a nice stylish plate with what you had in mind to go with this sauce.
