Recipe for Mexican Casserole (Cazuela)

The mexican food recipe known as "Cazuela" or casserole in english can be encountered in many states of Mexico, with different recipes; the traditional way of making this in Sonora is characterized by having abundant broth and with the special flavor given by the chick-peas and the pepper. Simply delicious, and healthy too!




Mexican food recipe for cazuela from Sonora

Ingredients for 3-4 people:

* 2 lb. Flank or short loin beef
* 1 lb. of Green beans
* 1/2 lb. Chick-peas
* 1 ancho chili
* 2 Red Tomatoes
* 1 Large Onion
* 1 Clove of garlic
* Salt to Taste
* Black Pepper to Taste

Preparation:

1 Soak the chick-peas in water, the day before and let them soak overnight. In the morning set them to cook over low heat with the meat which will have been previously cut in small pieces, halfway through cooking time add salt and pepper.

2 When the chick-peas are cooked and soft, add the green beans and the onion. After this, prepare the chili: remove and discard its veins and seeds, soak in hot water. Once the chili becomes soft, blend it with the garlic. Boil the tomatoes for 1 minute, remove from the water, peel and discard the tomato's skin, its seeds and blend it.

3 Cook the chili with garlic, then add the tomato and simmer a little bit to reduce the sauce. Add the meat with chick-peas, the green beans and its sauce.

4 Adjust seasoning; and serve this typical meal from the Mexican State of Sonora.
