Chicken in adobo recipe (Pollo Adobado)

Here is an easy and simple procedure to make this dish, that is quite popular in Mexico; in spanish speaking countries and the Philippines, an adobo is a generic term for a marinade. This simple recipe will help you take advantage of the pressure cooker and will guide you step by step in the making of this delicious traditional Mexican dish. The chicken in adobo is a dish frequently served with mashed potatoes.




Mexican recipe for Chicken in adobo

Ingredients for 5-6 guests:

* 6 Chicken Pieces, complete legs or breasts without skin
* 1 Cup White Vinegar
* 1 Tablespoon Oregano
* 6 Ancho Chilis
* 3 Chillies Pasilla (use árbol chillies for a hotter taste)
* 6 Black Pepper peppercorns
* 4 dried cloves
* 1 piece of Cinnamon
* 1 Onion
* 2 Cloves of garlic
* 1/2 cup extra-virgin olive Oil
* 1 teaspoon cumin
* Salt and Pepper to your Taste

Preparation:

1) First of all, you will have to remove seeds and veins from the chilies, then roast the chillies, to finally leave them soaking in warm water for ten minutes.

2) Put the chillies we just soaked in the blender where you will blend your Adobo; add to the blender bowl the garlic, the onion, the cloves, the peppercorns, the cinnamon, the cumin and the vinegar. Once well blended, we are almost finished with our Adobo marinade; the only step left is to add salt to season it the way you like it.

3) Season the pieces of chicken and place them in a glass container.

4) Spread the Adobo over the chicken pieces and put the chicken to marinate in the refrigerator for three hours.

5) After three hours have passed, place the chicken in the pressure cooker and add all the Adobo you have left.

6) Cook the chicken with the Adobo in the pressure cooker for 10 minutes, until the chicken is perfectly cooked and ready to eat.
