Vegetarian burrito recipe (burrito vegetariano)

There are many ways to make vegetarian mexican Burritos as seen in the previous recipe from this section; in this case here we use a stuffing with red kidney beans, tomatoes and onions as the featured ingredients that replace the usual meat or chicken.




Recipe for vegetarian burritos:

Ingredients:

* 12 corn tortillas
* 2 red tomatoes, chopped
* 1 big onion, chopped finely
* 1 small red pepper, chopped
* 15 oz. red kidney beans can, already cooked and drained
* 2 tablespoons olive oil
* 1 pinch of salt, to taste
* 2 teaspoons cumin
* 1 clove garlic,
* 4 jalapeno peppers, chopped
* grated cheddar cheese
* 1 romaine lettuce head, shredded


Preparation:

1) In the olive oil, fry the onion and red pepper and when they are almost tender press in the garlic cloves, and continue frying these ingredients

2) When you see the garlic is changing color without allowing it to burn, its time to mix in the chopped tomatoes, cumin and season with salt, to your taste

3) When the tomatoes have reduced and melted pour the red kidney beans in and mix. Continue frying for a few more minutes, then pour in a bowl and let the vegetables cool down a little bit.

4) Flash-fry the tortillas one by one in oil, stacking them on a plate as you fry them. Lay them flat, then fill them with the beans-tomatoes mixture and some chopped jalapeño peppers, then roll them up like burritos. Place three per plate. Sprinkle the grated cheese over the burritos then microwave to melt the cheese, if desired.

Serve your vegetarian burritos with some shredded salad on the side and more chopped raw onions sprinkled on top, again if desired...
