Green Tomato Sauce Chicken Albóndigas (Albóndigas de Pollo con Tomate)

You can also make delicious albóndigas from chicken, for this you can purchase ground chicken or simply mince boneless chicken breasts or thighs with a food processor using the appropriate blades. This recipe suggests using green tomatoes but it would be equally delicious with red tomatoes.








The Chicken Albóndigas in Tomato Salsa:

Ingredients:

* 2 lb. Boneless chicken meat
* 1 tablespoon finely chopped onion
* 4 tablespoons breadcrumbs
* 1 egg
* 1 teaspoon pepper
* Salt to taste
* Oil, as needed

For the salsa verde:
* 2 lb. green tomatoes, husked, washed and roasted
* 1 onion, peeled and roasted
* 1 onion, chopped finely
* 1 clove garlic, minced or crushed
* 1 small bunch of cilantro, washed and chopped
* 2 tablespoons chicken bouillon

Preparation:

1) Finely mince the chicken, by slicing it very thinly or using a food processor. Mix all the meatball ingredients together, then form the albóndigas then fry them in hot oil, to give them color and start cooking them; add the chopped onion, and fry everything for 3 minutes; reserve.

2) Next, proceed to making the salsa verde; using a blender blend the tomatoes with the garlic, the onion (previously roasted), chicken bouillon and cilantro; pour this green salsa to the same pan in which you have the albóndigas.

3) Finish cooking the chicken balls in the salsa verde, simmer for 10 minutes or time needed to finish cooking them; your chicken albóndigas are ready!
