Tex-Mex style chicken (Pollo estilo Tex Mex)

Key to many Tex-Mex recipes is the Tex-Mex spice mix you will use, you can buy it ready-made from the store (they often come with scary unnecessary chemicals), or mix it yourself to your taste; here is an easy recipe for a dish that takes advantage of these mixed spices with chicken and some vegetables.

Tex-Mex style chicken

Tex-Mex chicken recipe

Ingredients for 4 guests:

* 6 Boneless Chicken Thighs or 4 Chicken Breasts
* 3/4 cup water
*2 tablespoons lemon juice
* 3 tablespoons butter
* 2 tablespoons honey
* 1 red pepper
* 1 green pepper
* 2 cloves garlic, minced
* 2 Tablespoons chicken broth powder
* 1 onion
* 1 and 1/2 tablespoons of corn starch
* a few fresh cilantro or parsley leaves for garnish.

Tex-Mex seasoning spices (or use the ready-made mix from the store):
* 1 tablespoons paprika
* 1 teaspoon onion powder
* 1 teaspoon cayenne pepper
* 1 teaspoon cornstarch
* 2 teaspoons cumin
* 1 teaspoon salt


1) Mix the Tex-Mex spices together: the paprika, the onion powder, cornstarch, cumin and salt, and mix well. Cut the chicken breasts into thin slices and place in a bowl and mix with the Tex Mex spice mix we just did. Mix well and reserve in the refrigerator.

2) Chop the onion, slice the peppers, discard their seeds and reserve both separately.

3) Heat oil in a wok or skillet and saute the onion and chicken in small quantities. Stop frying them when the chicken strips are golden brown, remove from wok and keep warm.

4) Cook in the same pan or wok the peppers until they are tender, add more oil if needed. Reserve.

5) In a bowl, mix the lemon, water, garlic, cornstarch, honey, a drizzle of oil and pour our Tex-Mex spice mix into the pan, and fry a little bit but be careful not to burn the spices; add the butter and the chicken stock.

6) Add the chicken and finally the peppers stir well to coat everything with the spice coloration. Your meal is ready, serve each plate decorated with fresh cilantro leaves...
