Tequila Chicken Wings (Alitas de Pollo al Tequila)

These wings will marinate in the marinade with Tequila and chipotles, and this is what will give this exquisite mexican touch to our tasty mexican chicken wings. Serve with corn tortillas, some refried beans, salsa and a cold mexican beer…








Tequila Chicken Wings

Ingredients:

* 2 lb. chicken wings
* 12 cloves garlic, mashed
* Juice from 2 limes
* Juice from 1 orange
* 1/2 Cup Tequila
* 1 tablespoon paprika
* 3 Chipotles in adobo, chopped finely,
* 2 tablespoons of the adobo that came with the chipotles
* 3 tablespoons vegetable oil
* 2 tablespoons honey
* 1/2 teaspoon ground allspice
* 1/2 teaspoon cumin
* A pinch of ground cinnamon
* Pinch of dried oregano
* Halved tomatoes, grilled and grated with cheese to accompany your wings

Procedure:

1) Cut chicken the wings at the joints in two pieces, and throw out the meatless tips. Mix all ingredients (Tequila, minced chipotles, adobo, oil, honey, juices) together with the spices.

2) Put the wings in a bowl then pour the other ingredients over. Mix gently everything so that the raw wings are all well coated in the marinade. Cover the bowl and let the wings marinate in the refrigerator for at least 3 hours, or preferably overnight.

3) Preheat the barbecue; when hot grill the wings, turning frequently, for 15-20 minutes or until they aregolden brown and crisp and the juices run clear when pierced.

Serve accompanied the grated grilled tomatoes, if desired.
