Tequila Shrimp (Camarones al tequila)

Today a delicious, and very mexican, seafood recipe; get ready because we teach you how to prepare a delicious tequila shrimp dish with an easy method that requires very little time and all you need is very easily available ingredients; if you choose to flambe them, please make sure you are comfortable with this procedure....







Recipe for Tequila Shrimp

Ingredients:
* 2 lb. raw jumbo shrimp, cleaned and peeled
* 1 cup of tequila
* 6 cloves of garlic
* 4 ancho chiles
* 6 cascabel peppers
* Butter to taste
* 5 lemons
* Dried Parsley, Pepper and Salt to taste
You will need a skillet and a tight fitting cover to put out the flames, if needed



Preparation:

1) The first thing to do is roast the ancho and cascabel chilies directly in the flame of the stove or on a griddle, and they are completely roasted then soak in warm water with a little salt for 30 minutes, once they have soaked clean them up and finally blend and let this mixture reserve it in a container.

2) Take a wide skillet and place about 2 or 3 tablespoons of butter, when this it has melted, spread it evenly throughout the pan and put the shrimp in along with 4 cloves minced garlic, a little salt and pepper; stir constantly for about 4 minutes until the shrimp becomes pink.

3) When this is good we pour the tequila in, and quickly flambe (this is optional); the fire should extinguish itself once the alcohol has burned, or you can put out the flame with the cover; add the peppers and the juice of the 5 lemons; mix well, cover the pan and simmer for 10 minutes.

4) After they have simmered 10 minutes, we are now putting in the finishing touches to our tequila shrimp; check seasoning and adjust the salt if needed. The Tequila Shrimp are served while hot accompanied by white rice as a side dish or salad.
