Tacos de Camarones (shrimp tacos)

Presenting a real taco recipe from Mexico for seafood tacos with shrimp! This taco recipe is also easy to make, with ingredients found at the local store... and the Tequila in this recipe help give this taco a special and unusual tone.




Tacos de camarones recipe (for two using these quantities)


Ingredients

Mexican Tacos with Shrimp
3 diced ripe tomatoes
2 minced cloves garlic
2 tablespoons of olive oil
1/2 red onion, diced
fresh cilantro leaves or 2 teaspoons coriander powder
1 lb. of shrimp
Salt to your taste
Pepper to your taste
1/2 cup of chipotle chiles
1/2 cup of Tequila
1/2 cup of grated Manchego cheese (can be replace with Pecorino)
8 corn tortillas
Some black sesame seeds




Preparation

* Prepare the chipotle chiles. Let them marinate in very little water; once they soften cut them up to pieces, including the seeds if you like spicy. Blend using a food processor, with the water you used for soaking them in the first place..
* Mix and cook the vegetables: the purple onion, the minced garlic and the diced tomatoes in a frying pan with the olive oil. Cook until everything is nice and well blended.
* Add the shrimps and the half cup of tequila; mix in the prepared chipotle preparation and allow the sauce to reduce.
* Add the Manchego cheese, epazote and chopped coriander leaves; mix.
* Fill your tortillas with this shrimp mixture and fold your tortillas for a nice presentation.
* Decorate each plate with radish and a little bit of black sesame seeds.
