The Mango and Avocado with Pork Tacos (Tacos de cerdo con salsa de mango)

This type of taco is not very frequently seen in Mexico, but it's not unheard of. It is said that in the northern states people enjoy less spicy food compared to the rest of the country. The mango and avocado topping can be considered a salsa, especially as described here; this salsa is delicious with fish, chicken and also pork, as can be seen here. Naturally, this does not mean that this mango salsa can't be spicy! Some recipes even have it with habanero peppers... I am always sceptical when including really sweet fruits such as mango in a main course dish, but allow me to tell you, the combination of mango, avocado, red onions and cilantro is truly divine!







Mango and avocado tacos

Recipe for Tacos with Avocado and Mango

Ingredients for 4-6 people:

* 3 lbs. of pork shoulder meat
* 3 tablespoons tomato paste
* 1 big red onion
* 1 big mango
* 1 avocado
* 1 cup white vinegar
* 1 cup fresh cilantro leaves, coarsely chopped
* refried beans, as side
* 12-18 corn tortillas

Making this recipe:

1) Place the pork meat in a pot, 3-4 cups of water with the tomato paste dissolved in. Cook the meat covered, in the oven at 325 °F (165 °C) for 3-4 hours, or until it can easily be shredded. While the meat is cooking you can skip to the next steps and prepare the mango salsa. Do not discard the cooking juice! With two forks, pull or shred the pork meat, and put it a pan over the stove.

2) Over medium heat setting, cook the meat a little more in that pan, pouring the juice it cooked in over the meat so it absorbs it. We do not want to make the meat dry by overcooking it.

3) With a knife, peel the mango then dice it; peel and dice the red onion. In a deep bowl, combine the mango and onion with the cilantro; pour in the vinegar and mix. Set aside until ready to serve.

4) We wait for the moment when we are ready to serve, to peel, dice and mix in the avocado, so it does not have a chance to oxidize. Heat up the tortillas in the microwave, wrapped up in a piece of cloth for two minutes.

Finally let's prepare each individual dish, by placing some refried beans on the side, then preparing each taco with pulled pork and some mango salsa on top!
