Tex-Mex Grilled Steak and Pico de Gallo Burrito (Burrito de carne asada)

All the spirit of Tex-Mex food in a very simple Burrito recipe, with beef and pico de gallo, the beef cooked on the grill. As with most beef burritos, the quality of the beef cut you choose will have a big impact on the overall taste of this burrito. Also all the better if you can buy some good marinated steaks...




Tex-Mex Burrito Recipe

Ingredients for 4 guests:

* 1 lb. beef steak (ribeye or chuck cuts)
* 8 Wheat flour tortillas

Pico de Gallo:
* 2 firm red tomatoes
* 1 onion
* 1 avocado
* 1/2 cup fresh chopped cilantro
* 2 jalapeno pepper, sliced,
* 1 small red bell pepper, sliced
* 1 lime

For the meat rub:
* 2 teaspoons of salt
* 1 tablespoon ground black pepper
* 1 tablespoon Chili powder
* 1/2 tablespoon of ground cumin
* 1 tablespoon garlic powder
* 1 teaspoon cayenne pepper

Preparation time: 35 minutes | Grilling time: 10 minutes | Total time: 45 minutes

Preparation:

1) Very finely chop the tomatoes, avocado in small cubes, cilantro and onion into small pieces. Squeeze the lime juice and add it to the vegetables. Cut the peppers into slices and add to mixture; this is your Pico de Gallo: reserve.

2) Mix the spices for the rub and mix the spices mixture with the meat, so that all the meat is well coated in them; let the meat stand in these spices for 30 minutes.

3) Turn on and heat up your grill or barbecue for a direct heat. Sear the meat about 3 minutes on each side and cut it in thin slices. All you have left to is to heat up your tortillas on the grill your BBQ's and stuff your meat and Pico de Gallo.
