Silao-style Taquitos, from the Guanajuato state (Taquitos de Silao)

These Silao style Taquitos were created in the state of Guanajuato, where people share this delicious mexican dish with the whole family.




Recipe for Silao-style taquitos

Ingredients:

* 16 small corn tortillas
* 1 cup queso fresco, more if needed (make Queso Fresco yourself)
* 2 Chorizo sausages
* 3 chipotle peppers in adobo
* 2 avocados
* 6 green tomatoes
* 2 medium onions
* 2 clove of garlic
* 1/2 lettuce head
* fresh cilantro
* butter
* salt

Preparation:

1) Fry the chorizo sausages in butter and remove from pan. In the same butter that was used for the chorizo, fry one onion, previously finely chopped. Onion is removed and in the same fat begin frying slightly the tortillas.

2) Blend the tomatoes to a tomato sauce with the other onion and garlic together, and make this salsa simmer with a tablespoon of butter. Simmer over medium heat until the salsa has thickened.

3) Then, place one them each a slice of cheese, avocado, some chopped chipotle (seeded), some chorizo meat, fried onions and a little bit of the tomato sauce we did previously.

4) Roll the tortillas and arrange on each plates, topping them with chopped cilantro, then garnish with shedded lettuce leaves.
