Recipe for the Shrimp Fajitas (Fajitas de Camaron)

Shrimp Fajitas recipe

Ingredients for 4 guests:

Marinated Shrimp
• 1 tablespoon vegetable oil
• 2 teaspoon hot pepper sauce (Tabasco or Louisiana style)
• 1 teaspoon (5 ml) sugar
• 3 cloves garlic, minced
• Grated zest of 1 lime
• 1/2 teaspoon dried oregano
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon cayenne pepper
• 1 lb. raw medium size shrimp, peeled and deveined

Refried Beans
• 1 can 19 oz (550 ml.) cooked pinto beans, drained and rinsed
• 1 tablespoon butter
• 2 cloves garlic, minced
• 1/2 cup chopped onion
• 1 teaspoon ground cumin
• 1 tablespoon ground coriander
• 1/3 cup liquid chicken stock or water

Salsa
• 1 cup ripe red tomatoes, diced into small cubes
• 2 tablespoons chopped onion
• 1 tablespoon chopped fresh cilantro

Vegetables
• 1/2 yellow pepper, chopped
• 1/2 red pepper, chopped
• 2 tablespoons lime juice
• 1 1/2 cup shredded iceberg lettuce
• 1/4 cup sour cream
• 12 tortillas 6 in. diameter


Preparation:

Marinate the Shrimp

1) In a dish, combine all marinade ingredients. Add shrimp and stir. Cover with plastic wrap and marinate at room temperature for 15 minutes.

Making the Refried beans

2) Meanwhile, in food processor, blend the pinto beans.

3) In a skillet, melt the butter over medium, heat and sauté garlic, chopped onion, and during 2 minutes. Add the ground cumin and coriander and mix well. Add broth and beans ground and continue cooking for 3 minutes. Keep warm.

The Red Salsa

4) In a bowl, combine the chopped tomatoes, chopped onion and fresh coriander. Reserve.

Preparing the Fajita Garnish

5) Heat up a stainless steel skillet over medium-high heat and first start by cooking the peppers for about 5 minutes; then add in the marinated shrimp and cook everything for two more minutes, or until they reach a nice pink color indicating they are done. Deglaze with the lime juice. Remove from heat.

Place on the table the warm refried beans, the salsa, the prepared shrimp, lettuce, sour cream and tortillas. Leave it to each guest to prepare her or his own shrimp fajita!
