Potato and cheese tacos (tacos dorados de papa y queso)

The potato and cheese tacos are very commonly seen in Mexico; they are a simple recipe of taco, and each of these mexican recipes retain two main characteristics: this taco is made with mashed potatoes and it is fried in oil; anything more is open to your creativity!




Recipe for Potato and Cheese Tacos




Ingredients:

* 16 tortillas
* 5 potatoes boiled and mashed
* 1/2 chopped romaine lettuce
* 1 cup sour cream
* 2 jalapeño chiles
* 1 onion
* Pinch of cumin
* 1 teaspoon butter
* 1 and 1/2 cup grated monterey jack cheese
* 3/4 lb. panela cheese, cut in slices (if available; if not use more monterey jack)
* 1 cup red or green salsa
* Olive oil, for frying

Preparation:

1) Cut the jalapeño chiles lengthwise, and remove the seeds then chop them down to small bits. Clean and chop down the onion as well. In a skillet cook them slightly so they are cooked but still a bit crunchy.

2) Boil the peeled potatoes in water until they are tender. Once thoroughly cooked, mash them with a potato masher, add the butter and season with salt and a pinch cumin; mix the onions and jalapeños with the mashed potatoes.

3) If the tortillas aren't 100% fresh, heat them up on a comal or pan before stuffing them. Spoon the potatoes, jalapeño and onion mixture at the middle of the tortillas, and some grated monterey jack cheese.

4) Roll the tortillas up and secure each one with 2-3 toothpicks if necessary. Fry in oil over medium heat until golden brown and crispy.

5) Take out of the oil and place on paper towels to remove the excess fat; take out the toothpicks you used for frying.

Divide your potato and cheese tacos between the guests to serve, sprinkle more grated cheese over them, place some lettuce on the side, sour cream and salsa.
