Beef or Chicken Oaxaca style Tostadas (Tostadas de Carne de Res o Pollo al Estilo Oaxaca)

These Oaxaca style tostadas can be made with either chicken or beef; this recipe assumes the meat or chicken is already cooked so this makes this dish an ideal recipe to use those pulled meat leftovers, Oaxaca style!

Beef or Chicken Oaxaca style Tostadas




Ingredients (4 tostadas):

* 2 cups pulled meat, beef, or chicken, cooked then pulled
* 2 tablespoons Olive Oil
* 2 cloves of garlic, peeled
* 2 teaspoons cumin powder, divided
* Salt and pepper to taste
* 1 can cooked red kidney beans
* 4 fried tortillas or tostadas
* 1 cup crumbled Oaxaca cheese
* 2 medium avocados, peeled and sliced.
* 1/4 cup Salsa Ranchera
* 1/4 cup sour cream
* 1/4 cup chopped cilantro
* 1 can of sliced marinated Jalapeño Chiles

Preparation:

1) Thoroughly mash the red kidney beans with a fork, season with salt and cumin to your taste, then fry in a frying pan with a drizzle of olive oil, and reserve.

2) Pour some olive oil in a pan, then fry the pulled meat or chicken, press in the garlic cloves, then mix with the cumin, salt and pepper to taste.

3) Spread the mashed red refried beans on the tostadas, uniformely and all over.

4) Over the red kidney beans, arrange the meat or chicken then top with Oaxaca cheese, top with some sliced avocado pieces, some Salsa Ranchera, sour cream, chopped cilantro and sliced Jalapeño Chiles to taste.
