Mexican mustard chicken wings
(Alitas de pollo mexicanas a la mostaza)

There are many occasions when mexican recipes for comfort food will always be very appreciated… and only seldomly you will find people who can honestly say they do not like good chicken wings! Inexpensive and delicious here is another recipe for chicken wings; not sure these are genuinely mexican or if this recipe was imported, but I have seen them prepared like this in Mexico.

Mexican mustard chicken wings

Ingredients

* 15 chicken wings or more
* 1 onion
* 1 large can of tomatoes
* 1 tablespoon tomato paste
* 1 tablespoon red hot pepper sauce
* 2 tablespoons mustard
* 3 tablespoons sugar
* 2 shallots, finely chopped
* salt, to taste
* 5 tablespoons oil
* 1 tablespoon soy sauce

Preparation

1) Using your blender, liquefy the whole content of the can of tomatoes with the tomato paste, mustard, sugar and hot pepper sauce; season with salt, check the taste it should be bittersweet; reserve.

2) Cut and discard the tips of the wings, then cut them again in two. Wash then dry them with paper towels. Fry the wings in a pan with hot oil.

3) As soon as they start to turn brown, season with salt, add the finely chopped onion and cook until the shallots brown.

4) Baste the wings with this sauce we have just prepared right in the pan, along with the shallots and soy sauce.

Continue frying until the wings are cooked and the sauce has reduced.
