A refined recipe, that takes advantage of ingredients from Mexico: pork tenderloins, bacon, Port, onions, leeks, garlic and mango. Let’s roll up our sleaves and start this mexican recipe…
* 2 pork tenderloins
* few strips bacon,
* 2 Mangos
* 2 cloves of garlic
* 2 leeks
* 4 green onions (shallots)
* 1 cup port
* Olive oil
* Salt and pepper
Preparation:
1) Start slicing the tenderloins lenghtwise, and flatten it like a steak. Peel the mangoes then cut in strips, which we will place at the center of the tenderloin.
2) Close the tenderloins by tying them up with kitchen rope. In the enhanced version you can also put in some thin strips of bacon, ham, who tied with rope, will taste even better.
3) We place the fillets accompanied by leeks, shallots and garlic, all chopped. Sprinkle with Port wine and a drizzle olive oil on top.
4) With the oven preheated to 300 ˚F, we need to bake the pork about 35 minutes, but this can vary depending on the size of the tenderloins. It is worth the effort to baste the meat and shallots with the cooking liquids.
Serve with the sauce that resulted from cooking the meat with leek, shallot and garlic, previously passed trough a strainer; add more mango strips on the side if you have some left...
