Rice is a staple ingredient that offers a world of possibilities when preparing it! The nice thing is to have at hand several recipes for a bit of variety and to help playing with new flavors. In this case we are going with a really simple recipe: a mexican rice with lime and cilantro. A new flavor with everyday ingredients!
1) In a large pot heat the 2 tablespoons olive oil over medium heat; immediately add the onion and fry for two minutes.
2) In the pan add 1 minced clove of garlic and brown for 2 minutes. Add rice and cumin and cook for 1 more minute.
3) Add 3 cups chicken broth and bring to a boil. Cover, reduce heat and cook until rice is done and all the water is absorbed.
4) Meanwhile we will blend the cilantro sauce, using the blender to liquefy the cilantro, the remaining 1/2 cup of chicken broth, the lime juice, the remaining 1 clove garlic, and salt and pepper to taste.
5) When the rice has absorbed the first round of chicken broth, fluff the rice and add the cilantro sauce with the rice; cook uncovered over the stove for a few minutes until all liquid is finally absorbed or evaporated.
Decorate each serving of this rice with fresh cilantro leaves placed on top...
