Melted Cheese with Chorizo and Poblano strips (Choriqueso)

A simple mexican snack with cheese and chorizo sausages prepared with strips of poblano chiles. The choriqueso is usually served in decorated clay bowls, accompanied by tortillas and a spicy salsa… in northern Mexico this is served as a quick fix to munchies from a long night out partying!

The Choriqueso recipe:

Ingredients

* 1 whole Chile Poblano, roasted, seeded and then sliced into thin strips
* 1 tablespoon butter
* Salt and pepper
* 1/2 lb. fried chorizo, sliced in small meatballs
* 4 cups grated orange colored Cheddar Cheese
* 12 small tortillas

Preparation

1) Fry the chile strips in the one tablespoon butter, slightly season with salt and pepper, then set aside.

2) Fry the chorizo sausages, previously cut in pieces, then set aside.

3) Slightly grease up 2 ramekins or small clay bowls. In the first one, put half the cheese and half of the chile strips. In the other bowl, place the remaining cheese and half the sausages. Cover the ramekins with foil and put them in the oven, preheated to 300˚F, until the cheese begins to melt (about 3 minutes). Uncover and cook another 2 minutes or until cheese is completely melted. Place the remaining strips of poblano chile and chorizo ​​remaining in their respective bowls.

Serve while hot with the fresh tortillas so everyone can help themselves and prepare their own tacos. Serve with some spicy Mexican sauce on the side...
