The Chicken with Mixmole (Pollo en Mixmole)

San Andres Mixquic is a very interesting and picturesque mexican town, located in the mexican federal district, and San Andres Mixquic is renowned for the intensity with which they commemorate the Day of the Dead, with celebrations and events spanning from October 31st until November 2nd. Perhaps this has something to do with how old this town actually is... San Andres Mixquic has been inhabited without interruption for more than 1000 years!

As the Day of the Dead is gaining popularity, visitors are also noticing a local chicken stew, served for this occasion: the chicken mixmole. The mixmole stews are a tradition from Mixquic, and this is where this dish prepared as a part of this Day of the Dead tradition: the chicken mixmole is one of the dishes that must be offered to the dead on the altar (ofrenda).




Easy Recipe for chicken in Mixmole

Ingredients (6 people):

* 1 Whole Chicken
* 1 bunch of hierbas de olor
* 1 cup Cilantro
* Salt to taste
* 1 clove garlic
* 1/2 onion, cut in a few pieces
* 3 Barbary Figs (cactus pears)
* 50 Grams Seed Ancho Chile
* 3/4 cup peanuts
* 1/2 cup of sesame seeds
* 1/2 cup butter
* 1 onion, chopped

Preparation:

1) Boil the whole chicken in 8 cups water with the hierbas de olor, the cilantro and salt for 40 minutes over medium heat setting.

2) After the 40 minutes, add a clove of garlic, the half onion pieces, peeled and seeded barbary figs to the broth and cook for 20 more minutes.

3) In a pan roast the chile seeds, peanuts and sesame seeds over low heat and fry in butter with the whole chopped onion, then cook 5 minutes and then liquefy this, with the barbary figs in a blender.

4) Start toasting the sesame seeds in the oven, until their color changes slightly, careful not to burn them!

5) Finally, empty the blended mixture into a casserole, add the chicken, 3 cups of the resulting chicken broth and boil for 10 minutes. Serve your chicken in mixmole warm with some white rice.
