Recipe for Chicken Fajitas (Fajitas de Pollo)

The actual Mexican Fajitas from northern Mexico are traditionally served with beef or veal and corn tortillas. Since we are exploring Tex-Mex cuisine in this section of the site, with the huge success the fajitas have encountered outside Mexico, many other types of fajitas were adopted, using wheat flour tortillas. Here is a chicken fajita recipe with simple ingredients from around the house, no purchased fajita seasoning (which also tastes great, but I like to mix my own) or anything like that. A quick and easy recipe to prepare. You can accompany the chicken fajitas with the traditional sour cream, spicy red salsa, or any other sauce you usually like with fajitas.

Chicken Fajitas recipe

Ingredients for 2 people:

* 6 Wheat tortillas (3 per person)
* 1/2 lb. boneless chicken breasts or thighs
* 1/2 green pepper and 1/2 red pepper
* 2 large red tomatoes
* 1/2 red onion
* One head romaine lettuce
* 1/4 lb. grated orange cheddar cheese
* 1 clove garlic
* 1 Hot red chile, such as Fresno or Jalapeño
* 1 teaspoon cayenne pepper
* Olive oil
* Salt and pepper

Preparation:

1) Cut the peppers in thin strips a little thick, and slice the onion into thin half circles.

2) Put two tablespoons of olive oil in a skillet and when hot add the peppers and onion. Add a pinch of salt and sauté everything for 10 minutes.

3) While the vegetables are being cooked, use this opportunity to clean the chicken meat you have. Slice the chicken into thin strips, add salt and pepper and set aside.

4) After 10 minutes of cooking the vegetables, add the finely chopped tomato (remove seeds if you like it better). Cook this now for 10 minutes.

5) Set the oven to heat to 300 ºF. We will use it later to heat up the wheat tortillas.

6) In another pan put two tablespoons of olive oil, a chili pepper (you can use cayenne pepper) and a clove of garlic peeled and itching. When oil is hot, add the chicken strips and saute for a few minutes until chicken is golden brown.

7) When the chicken is done, add chicken with garlic and chiles to the vegetables and mix. It's time to add the cayenne red pepper (1 teaspoon). Mix well and take the chicken and vegetables away from the stove not to burn the paprika.

8) Take the lettuce (previously thoroughly cleaned and dried completely) and chop it down finely. Add it to the vegetable mixture with chicken and mix well. Now take the grated cheese and throw it over the mixture.

9) Heat up the wheat flour tortillas in the oven, or one by one over a comal and grill them to brown as flour tortillas.

When the tortillas are hot, serve, putting the Chicken Fajitas with Vegetables in a large bowl, to let your guests make their own Fajitas, with some salsa and sour cream.
