Panes Compuestos Chiapanecos

The Pan Compuesto is a snack from the city of Comitán de Domínguez, in the state of Chiapas, a region close to the border with Guatemala. This dish is a classic sandwich, served mainly in the cenadurías from that city. The actual preparation of this dish will require a bit of planning, as before making these sandwiches the pickled vegetables condiment has to be ready, plus the pork meat filling and the other typical ingredients which can be onions and tomatoes. The paninis or French-type bread rolls, are sliced open in halves and spread with mashed beans and then filled with meat and pickled vegetables.







Recipe for the Pan Compuesto

Ingredients:
* 8 Small Paninis (or better, use latin bolillos)
* 1 cup refried black beans
* 8 tablespoons mayonnaise
* 2 lb. of pork leg, cooked in a good broth and shredded
* 2 cups finely chopped fresh cabbage
* 1 cup of queso fresco cheese

For the pickled vegetables:
* 3 carrots, completely grated down
* 1 cup white vinegar
* 1/2 cup olive oil
* 2 onions, thinly sliced in rings
* 2 teaspoons oregano
* 1 teaspoon of thyme
* 3 teaspoons allspice powder
* 1 tablespoon sugar
* Salt to taste



Preparation:

1) Making the pickled vegetables: grate the carrots down, then put them in a saucepan with the vinegar. In another pan put the oil, add one chopped onion and fry. Once fried, add carrots with vinegar to the onions; add herbs, pepper, cinnamon, sugar and salt. Cover and simmer for 15 minutes. Cool and can be stored in jars.

2) Put the piece of meat in a pot, covered in a good meat bouillon, cook slowly in the oven for 2-3 hours or until the meat is easy to shred.

3) Slice the small bread loaves in half lengthwise, spread some mashed beans on the bottom part and the other part with mayonnaise, then put the meat, pickled vegetables, cabbage and finally sprinkle the cheese. Close the sandwiches, grill and serve...
