Here is another idea to make tacos: with caramelized onions and chicken or steak... Not one of the most frequently seen tacos, but they are delicious, so here is how this taco is made in Mexico for a nice diversion from the usual ones.
* 12 corn tortillas
* 3 chicken breasts
* 2 red peppers
* 2 green peppers
* 2 Yellow Peppers
* 3 medium tomatoes
* 1 average onions, finely chopped
* 1 olive oil deciliter
* salt and pepper
* 2 big onions, to be caramelized
* 1 lemon
* Worcestershire sauce
Preparation:
1) Peel and dice the tomatoes into cubes and reserve. Roast the peppers on a baking sheet in the oven, when they are roasted all over, put them in a plastic bag to peel them (this is optional). Slice in strips.
2) Slice the chicken breasts in thin strips; sauté the average sized onion in hot oil and once it is starting to brown add the peppers to the pan with the tomatoes and saute these ingredients. When the tomatoes are thoroughly cooked add the strips of chicken breasts, season with salt and pepper and cook for about 10 more minutes.
3) In a separate pan, fry the two chopped medium onions slowly over medium heat setting, with two tablespoons oil and about half way add in 3 tablespoons water or more so they won't go dry, continue frying until they are caramelized; when they reach that point, add lemon juice and a little bit Worcestershire sauce. This step takes a bit of time to do it right so take your time...
4) In a closed pot, heat the tortillas in oven at 300 °F for 10 minutes; or you can wrap them in towels and heat up in the microwave for 2 minutes. Once hot we fill them with the chicken and chiles mixture, spoon some caramelized onions with a dash of lemon over it all, then fold in two and serve.
