The ranchero beef is a typical mexican family dish, for this dish will need a few basic ingredients which are easy to find at any grocery store. This dish isn’t really a stew: the beef cubes will cook rather quickly, so for this reason in this recipe we recommend here that the cubes be from a better cut of steak or beef in general.
Ingredients:
* 3 lb. (1.36 kg.) beef, sirloin tip roast cubes
* 1 small can (5.5 oz or 170 g.) tomato paste
* 2 potatoes
* 1 onion
* 2 ripe red tomatoes
* 3 bay leaves
* 2 black peppercorns
* 3 jalapeno peppers
* Salt and ground pepper to taste
Preparation:
1) In a bowl, season the beef cubes with ground pepper; leave for a few minutes while we carry out the next steps
2) Slice the potatoes in quarter inch slices. In a skillet with hot oil, carefully fry the potato chips untill they are well fried; which you will then place in a bowl with some paper towels to remove the excess oil.
3) Pour a drizzle of oil in the skillet and when the oil is hot, sear the beef cubes on all sides: when all cubes are well seared reduce the heat setting and cook them to desired doneness. When they are cooked, remove them from the skillet and reserve into a clean bowl.
4) Slice the onion in thin slices and fry in the skillet until they start to be transparent; this is when we add the diced tomatoes, fry for two minutes then add the sliced jalapeno peppers as well and mix.
5) Now add the tomato paste, a touch of salt, the peppercorns and bay leaves. Cover the skillet and bring to a boil; at first sign of boiling reduce heat to low heat and add the meat and mix.
6) Add back the beef cubes, and the fried potatoes; mix: your ranchero beef dish is ready...
