Avocado salsa (salsa de aguacate)

The avocado salsa is a delicious green salsa with a touch of spiciness, perfect for many mexican dishes, from tacos to carne asada. To make this salsa more creamy, you can add one more avocado to this recipe. Please note this salsa is not at all considered a variant of the guacamole, those two salsas are completely different things...

Recipe for Salsa de Aguacate

Ingredients, for 5 people:

* 1 large avocado
* 5 green tomatoes (tomatillos), peeled
* 3 serrano peppers
* 1 clove garlic
* 1 cup water
* 1 teaspoon salt
* 1 teaspoon white vinegar
* 1 tablespoon lemon juice
* 2 Onions, peeled and quartered
* Cilantro (to taste), chopped very finely

Preparation:

1) First, place the green tomatoes, the serrano peppers, the onions and garlic on a baking sheet and roast them in the oven, until they are roasted but not charred.

2) While the tomatillos and peppers are roasting, peel your avocado and put the avocado flesh in your blender's bowl; also put in the vinegar, the lemon juice, half of the cilantro you intended to put in, the water and the salt. You can start coarsely blending these ingredients while the others are roasting.

3) Once the peppers, tomatillos, onions and garlic are roasted, put them in with the other ingredients to the blender and blend until you get a smooth and liquid salsa. Pour the mixture into a bowl.

4) Optionally you can chop finely another half of an onion and mix it raw in the salsa; add the other half of the chopped cilantro and mix everything. Serve the avocado salsa to your guests...
