A great recipe to make quesadillas: try the shrimp quesadillas!

The quesadilla is a basis for many mexican recipes or dishes and offers us many amazing possibilities; and I will not overburden this website by putting too many similar combinations online. However there are really delicious ingredient combinations to try and this shrimp quesadilla recipe is certainly one of them! 




Recipe for mexican shrimp quesadillas:

Ingredients:

• 8 corn tortillas
• 2 cups grated Monterey Jack cheese
• 1 lb. shrimp
• ½ cup fresh tomatoes, diced
• 5 tablespoons fresh chopped cilantro leaves
• 1 ripe avocado, peeled and cut into thin slices
• Salt and ground black pepper
• 5 tablespoons canola oil

Preparation:

• Place the 4 tortillas on a flat surface
• Peel the avocado and mash it with the tomatoes.
• Mix the ingredients (Monterey Jack from California, shrimp, mixed avocado and tomatoes, and the cilantro) distribute them evenly over the tortillas, leaving a gap of one inch around the edge

• Place the end of the remaining ingredients, on the edge
• Season with salt and pepper to your taste
• Place remaining tortillas on top of the ingredients, pressing a little to make sure nothing moves
• Pour in a pan 2 tablespoons oil over medium heat
• Place a quesadilla in the pan and fry it for 3 minutes or until your cheese is melted. Once melted flip it to the other side
• Repeat the process with the remaining quesadillas
• Cut in half and serve immediately
