Quesadillas with chorizos and cheese (quesadillas con chorizos y queso)

Indeed, quesadillas are usually very easy to do, yet they can turn into a delicious and appealing dish, you just have to find your favorite ingredient combination... I present you here the fancier recipes just to give the visitor some ideas, but in general, quesadillas are pretty much left up to the chef's imagination. 






Recipes of quesadillas with chorizos and cheese (quesadillas con chorizos y queso):

Ingredients:

4 corn tortillas,
some chives or shallots,
1/2 lb chorizo sausage,
1/2 lb grated Monterey Jack cheese
1/2 lb grated cheddar cheese
2-3 fresh green chopped jalapeño chilis. (for a hotter taste - optional)



Preparation:

Cut your sausages in small rolls; cook them thoroughly in a little bit of oil.

In a bowl we mix the cooked sausage rolls, the grated cheeses, and the chive chopped to small bits, and the optional ingredients that you see.

Over a tortilla we put a little bit of the mixture and cover this with another tortilla, thus creating a tortilla sandwich (sincronizada).

Cook them in a very hot frying pan with a little bit of oil; flipping every side, until they are browned and crispy but not burnt. That's it!

Cut the quesadilla in 6 slices; serve with guacamole and some hot pepper sauce.
