Recipe for the chicken quesadillas

The description of this method to make this chicken quesadilla, with the two wheat flour tortillas used like a sandwich, would be a good example of what would be actually called sincronizada in Mexico.



Recipe for chicken quesadillas:



Ingredients:

* 6 flour tortillas (large 9 inch ones)
* 3 tablespoons canola oil
* half an onion, chopped to small bits
* 2 cloves of thinly minced garlic
* 1/2 cup green bell pepper cut in small squares
* 1/2 cup red bell pepper cut in small squares
* 1/2 lb. cooked boneless chicken breasts cut in small cubes
* 1 teaspoon of paprika spice
* 1 teaspoon cumin powder
* 1 and 1/2 teaspoon salt
* 2 tablespoons cumin
* 1/4 cup cream cheese
* 1 cup grated cheddar cheese


Preparation:

Pour the oil in a frying pan, and heat it up to temperature.
in the oil saute the onion with the garlic.
Add the green and red peppers, cook for one minute.
Add the chicken, paprika, cumin and salt.
Cook until the chicken is well done.
When the chicken is done, add the coriander.
Lower the heat, pull the frying pan away from the heat.
Allow your mixture with chicken to cool down and mix with the cheese.
Lay a tortilla flat on a plate and spread some of the chicken and cheese mixture on it,
mostly put the mixture on the center of the tortilla
Lay another tortilla over the mixture and the first tortilla, creating kind of 'tortilla sandwich'
Pour more canola oil in the frying pan and bring it up to heat.
Fry the quesadilla until it is browned a bit, then carefully flip it, avoiding to burn it.

Chop your quesadilla in 6 slices; arrange nicely on a nice serving plate.

Serve with guacamole, hot pepper sauce and sour cream
