Tripe Quesadillas (Quesadillas de Pancita)

The quesadillas of tripe are traditional food from the mexican state of Hidalgo; they can be prepared with beef tripe as explained here or using lamb tripe which is the more authentic recipe from that state. You will see quesadillas de pancita offered at many street stands across Mexico…








Recipe for Quesadillas with Tripe:

Ingredients:

* 1 lb. beef tripe, washed
* 12 corn tortillas
* 2 ancho chiles
* 2 Onions
* Sea salt to your taste
* 4 leaves Fresh mint, chopped
* 1/2 cup Oil
* 4 cloves garlic
* 1 lb. Cheddar or Monterey Jack cheese; better if you have Oaxaca cheese
* Water as needed

Procedure:

1) Make sure the tripe is perfectly clean; cook the beef tripe in boiling water, with half the coarsely chopped onion, salt and half the mint. Simmer until the tripe is tender or about 3 hours, save the water the tripe cooks in. Slice the tripe in narrow strips.

2) Put the chiles in hot water until they become tender, then liquefy with one cup of the water the tripe cooked in. In a skillet, saute with lard the other half of the finely chopped onions and minced garlic.

3) Add the beef tripe to the skillet, which you have previously sliced into thin strips. Saute and add the rest of the coarsely chopped mint. Fry for a few minutes then pour the liquefied anchos in, cook to reduce the sauce.

4) Make the quesadillas, by putting some shredded cheese and sauteed tripe strips in the tortillas.

5) Place the quesadillas in a skillet with a small amount of oil. Fry until the cheese in the quesadillas have melted, then serve...
