Spinach and cheese quesadillas, (Quesadillas de espinaca)

A simple and easy to make quesadilla recipe, usually served as an appetizer: the spinach and cheese quesadillas... a classic combination of two ingredients that complete each other very well!

Fried spinach quesadillas

Recipe for spinach and cheese quesadillas


* 1/2 cup steamed, or otherwise cooked spinach
* 1 tablespoon mint, dill and parsley, chopped very finely
* 1 onion, chopped very finely
* 1/2 cup crumbled mild feta cheese
* salt and pepper to taste
* 4 corn tortillas
* Enough grated mozzarella, to your taste

Making this mexican recipe:

1) Mix spinach, spices, onions, feta cheese, salt and pepper in a bowl. Melt a little bit of butter in a heated comal or griddle, put a tortilla in then flip in the butter after 30 seconds. Repeat this step with all 4 tortillas.

2) Sprinkle some grated mozzarella cheese on the tortilla, add the filling, then more cheese and another tortilla over the filling, pressing slightly. Cook on a griddle or comal until the quesadilla is browned and crispy on both sides and the cheese has melted.

3) Repeat this operation once more so that both quesadillas are ready; slice in 6 wedges and serve the spinach quesadilla wedges arranged on a stylish plate...
