Quesadillas with guacamole and pico de gallo

A nice little recipe for quesadillas made with guacamole and pico de gallo, a very traditional mexican ingredient combination, a dish good for any occasion!

Quesadillas with guacamole and pico de gallo


For the guacamole:
* 3 ripe avocados
* The juice of one lime
* 1/2 teaspoon salt
* 1/2 teaspoon ground cumin
* 1/2 teaspoon cayenne
* 1/2 medium onion, finely chopped
* 2 tomatoes, finely chopped

For the pico de gallo:
* 1 large tomato, chopped
* 1 small sweet onion, chopped
* The juice of 2 limes
* 4 tablespoons finely chopped cilantro
* 1/2 teaspoon salt

For the quesadillas:
* 4 flour tortillas
* 1 cup grated cheddar cheese, provolone or mozzarella


1) To make the guacamole, sprinkle the avocado with the lime juice in large bowl. With a fork, crush the avocado and add the salt, cumin and cayenne. We incorporate the onion, tomatoes and mix everything carefully.

2) To make the pico de gallo simply combine all ingredients.

3) To prepare the quesadillas, heat 2 flour tortillas in a pan. In another skillet, heat 1 teaspoon olive oil and when the oil is hot, fry the tortillas.

Sprinkle the shredded cheese on the tortillas. Cover with another tortilla and we flip it. Take out of the pan when the cheese starts to melt.

To serve, open and take a little guacamole and / or, pico de gallo.
