Quesadillas with asparagus and goat cheese (Quesadillas de Espárragos y Queso de Cabra)

Asparagus and goat cheese quesadillas

Ingredients

* 1/2 lb. fresh asparagus, split into four sections each
* 5 oz. of your favorite goat cheese, at room temperature
* 3 tablespoons olive oil, divided
* salt and freshly ground black pepper to taste
* 2 big tortillas
* Plenty chopped fresh cilantro, to your taste
* A few intact cilantro leaves, not chopped to decorate

Preparation

1) In a pan with 2 tablespoon hot oil over medium-low setting, saute the asparagus, mixing until they have softened and have taken a slight brown color. Take away from burner and adjust seasoning with salt and pepper.

2) Spread the goat cheese on one side of each tortilla; divide half the asparagus and half the cilantro and arrange over the goat cheese and fold the tortillas in half; brush the oil that is left on the outside of the two tortillas.

3) Heat up some oil in a skillet at medium heat setting and fry the quesadillas for about three minutes per side.

Serve these asparagus and goat cheese quesadillas, sprinkling a few cilantro leaves over them...
