An interesting take on the famous Mexican quesadillas; this time featuring unusual ingredients with french brie cheese. Well, after all, most great recipes come from breaking the conventional rules for ingredient combinations and finding innovative new associations that do taste amazing... this one is on its way for becoming a popular quesadilla recipe; easy to make and really good!
* 2 cups Arugula
* 2 sliced Granny Smith apples
* 2 yellow onions, sliced
* 1/4 cup balsamic vinegar
* 1 pinch sugar
* 1/4 teaspoon dried thyme
* 1/4 teaspoon dried rosemary, crushed or ground
* 1 tablespoon extra virgin olive oil
* 4 regular sized flour tortillas
* 1 tablespoon Dijon mustard
* 225 grams Brie cheese, sliced
Preparation:
1) Mix together the Dijon mustard and balsamic vinegar
2) In a skillet over medium heat, fry the onions in the oil, sugar, thyme and rosemary for 10 minutes patiently until onions have browned; add the washed arugula leaves and fry for 2-3 minutes more.
3) Add the mustard and vinegar mixture to the onions
4) Spread the mixture on over half of each tortilla laid flat, divide and arrange the apple slices and cheese over the onions. Fold them.
Fry them thoroughly on a grill over medium heat for 2-3 minutes on each side or until cheese is completely melted.
Accompany with letttuce, tomatoes, etc...
